UCHIKI KURI SQUASH SOUP

Started cooking my Uchiki Kuri Squashes. First made this risotto which was very nice, with a buttery chesnutty quality, but the Squash took ages to prepare.

Then made this soup with some added spices. This didn’t take as long as you roast the segments and then peel the skin off once they’re cooked which speeds things up a bit.

What’s your favourite recipe for winter squashes?
