So this was interesting.. I found this soup recipe for roasted parsnip soup in which you roast ALL OF THE VEG AT THE SAME TIME including the onions!
Then after roasting I blended it with some stock, but instead of using my hand blender used my smoothie blender which was so much better, and it tasted amazing.
But the real game changer for me was how roasting the onions was just as effective as frying them first, but also substantially less time and energy consuming!
I would imagine this recipe would work with most veg, certainly most root veg, so next year I can just do this with most of my root veg (carrot/beetroot/celeriac) when it’s in season and freeze it etc
Then have a winter of lovely soups!
